Process the oats

Process the oats for these chocolate chip cookies. I actually will process a couple of cups at a time so when I want to make this recipe again, I don't have to drag out my food processor.

Mix Butter and Sugar

Cream the butter and sugar together with an electric hand mixer.

Add eggs, vanilla extract and lemon juice. Mix thoroughly.

Add dry ingredients

Switch to a rubber spatula (so you don't over mix) and add in the dry ingredients in batches.

Chocolate chips & Walnuts

Add in chocolate chips and walnuts (optional). Mix together with rubber spatula.

Scoop the cookie dough

Portion the dough with a cookie scoop. Place on a parchment paper lined cookie sheet and freeze for a couple of hours before baking.
