I know two things: we're always working within a budget when it comes to household expenses and we're always looking for different ways to cook chicken! In comes Hellmann's and their Chicken Change Up campaign. When asked to join in, I couldn't refuse!
I had a little get together with friends and had them try my adaptation of their Oven-Fried Herb Chicken – I made them into nuggets! Inspired by a recipe that landed from my inbox from Everyday Food, I decided to use panko breadcrumbs.
When we throw a party, we try to use what we have and plan the food that way. I don't always use plastic or paperware, it's okay to use mismatched plates, it adds color to your party. And by all means, always, always have plenty of food! There's nothing like running out of food.
Do you want to win $5000 in groceries? Don't you think that would help out the monthly food budget a ton? Be sure to check out the budget friendly giveaway below!
From now until April 30, 2012, parents across the country can participate in the Hellmann’s® Chicken Change-up by trying one of the featured Hellmann’s® chicken recipes, sharing their recipe reviews and providing their own advice for managing dinnertime obstacles. After participating, consumers can enter into a sweepstakes for the chance to win a $5000 grocery store gift card and other daily prizes.[1]
[1] NO PURCHASE NECESSARY. Void where prohibited. Hellmann's Chicken Change-Up is sponsored by Conopco, Inc., d/b/a Unilever. Open to legal residents of the 50 U.S. & D.C., 18 or older. Begins 12:00 PM ET on 03/01/12 & ends 11:59 AM ET on 04/30/12. For official rules, visit the ‘Chicken Change-Up’ tab on the Hellmann’s Facebook page.
To cut into nuggets, I first cut the chicken in half length-wise, making them cutlets. Then I cut into strips. You're welcome to leave them as strips or fingers(!) or cut them into little nuggets like I did.
Browning the panko breadcrumbs before dipping the chicken in them cuts down baking time and gives your nuggets a well-rounded flavor.
Oven-Fried Herb Chicken Nuggets
Ingredients
- 1 1/2 cups panko breadcrumbs
- 3/4 tsp salt
- 1/4 tsp pepper
- 1 1/2 Tbsp Italian parsley, chopped or 1 tsp dried parsley
- 1 lb boneless, skinless chicken breasts
- 1/2 cup Hellmann's Mayonnaise Dressing
- non-stick cooking spray
Instructions
- Preheat oven to 400 degrees. Place breadcrumbs onto a lined baking sheet and bake for 6 minutes.
- Cut chicken into cutlets and then strips. Leave as strips or cut into nuggets of uniform size. Mix breadcrumbs with salt, pepper and parsley.
- Add chicken to zippered plastic bag along with the mayonnaise dressing. Shake evenly to coat. Remove chicken and lightly dip in the breadcrumb mixture.
- Spray a wire or cooling rack with non-stick cooking spray and place on top of a lined cookie sheet. Arrange chicken on top of the wire rack and bake for 8-12 minutes. Serve immediately.

My best budget friendly tip for throwing a party is prepare a large quantity of something delicious instead of many smaller dishes. Keep it simple!
Alysha @Shesontherun says
My tip for saving money while throwing a party is to plan ahead and use whatever you have on hand. For example, if I have a extra puff pastry in the freezer, I’ll plan an appetizer just around that to use up ingredients (which saves you money because you aren’t throwing them out), like an onion tart or pinwheel.

My favorite types of parties are informal ones where our friends all bring a dish to pass. That means we don’t have to buy or make it all. I also prefer to make beverages – lemonade, punch, etc. and have cold ice water handy. Buying soda can be a big expense for parties.

Our family favorite for budget friendly meals would be baked pasta. I make numerous combinations with sauce, shredded cheeses, veggies and my secret for a creamy touch is to use sour cream (kids don’t like ricotta) and it really is easy, very inexpensive and my pickiest eaters gobble it up!

Tip: use wooden floor samples from Lowe’s or Home Depot (they are FREEEEEEE) as coasters for a party.
Budget friendly meals – potatoes with veggies and huge mushrooms. The mushrooms can replace meat since their texture makes you think you are eating meat.

Do you have any budget-friendly tips for throwing a party? = make it yourself and don’t be tempted to buy things like pre-cut fruit or veggie sticks; they’re about 10x what they would be if you just cut up your own fresh fruit chunks and veggie pieces.
