How to Make Homemade Pasta with KitchenAid
Can we have a heart to heart? I know I was scared to make my own pasta for too long. If you're like me, I totally get it. But now, I'm no longer scared and I actually feel dumb that I was so scared for so long. With the help of my stand mixer and the KitchenAid pasta attachment, it made it much easier for me to get it done and make pasta so quickly.
I texted this picture to a friend and she said you're obsessed now right? Yes, I'm obsessed and I keep trying different flours. I can't wait to share more with you what I'm making.

Kitchen Tools I used for this recipe:
- White Marble Pastry Board (I own two of these!)
- KitchenAid® Pro Line® 7-Quart Stand Mixer (Sur la Table)
- KitchenAid® Pasta Roller Set (Sur la Table)
This is a really short post because like I said, I hope you'll watch the video and say oh my goodness, it's so easy, I want to try it right now!! And come back later this week, I'll have a KitchenAid surprise for you!
Recipe is Slightly modified from KitchenAid Pasta Attachment Manual.
Homemade Pasta Recipe
Ingredients
- 3 1/2 cups all-purpose unbleached flour sifted (plus extra flour for preparing)
- 1/2 teaspoon salt
- 4 large eggs beaten
- 2 Tablespoons water
Instructions
- Place eggs, water, flour and salt in mixer bowl. Attached bowl and flat beater. Turn to speed 2 and mix for 30 to 60 seconds. Add more water if the dough is too dry, in 1/2 Tablespoon increments.
- Change out the flat beater for the dough hook. Turn to speed 2 and knead for 2 minutes. Remove the dough and knead by hand for 2 minutes. Let it rest for 20 to 30 minutes.
- Cut dough into four pieces before processing with pasta sheet attachment. Take one piece and flatten into a rectangular shape. Adding flour to both sides. Be sure to cover the other pieces. Attach the pasta sheet roller to your stand mixer and set it to #1. Turn on the stand mixer to speed 2 and run the pasta dough through the pasta sheet roller. While on #1, fold the dough in half and run it through again. I do this several times.
- Adding a little bit of flour on each side of the dough again, change setting to #2 and pass the pasta dough through the sheet roller. I do this twice and then twice each on #3 and then #4. If you want thicker dough, don't do the #4 setting.
- Once again, add flour to each side of your long pasta sheet. Change the attachment to your spaghetti or fettuccine cutter and turn on to speed 2. Run the pasta sheet through and with your left hand, hold on to the pasta as it comes through the cutter. It's usually really long so I cut it and then wind it around my hand to create a nest. Allow pasta to dry for a few minutes before boiling.
- When boiling your pasta, it only needs 3 to 7 minutes to boil.
- With this pasta recipe, I prefer the fettuccine cutter.

We tried this tonight…mine must have been too dry because it came out in pieces rather than sheets. Any thoughts? We tried adding water with the second batch. Same result. We live in a very humid climate, if that makes a difference!
We just finished eating our first batch of pasta. This was also our first experience with our kitchen Aid Mixer and Pasta attachments As others have found your recipe too dry, so did we. I tried your recipe, it was great and easy to follow directions. My family loved the lasagna I made from the pasta dough. The trick to easy to handle dough is to measure the flour correctly. I did not have semolina so I used regular all purpose flour instead. It worked out great. Thanks for the video.

I am so excited to try this. Just one question/doubt: all purpose unbleach flour is the usual flour? All of the recipes I have been reviewing before my first try use semolina also. That is why I am choosing your recipe. But not sure if I only take the flour I have in my kitchen right now. I appreciate your help! Btw… I love your postings!

You can use bleached all purpose flour too. I just prefer to use unbleached…ever since I started baking and using flours. Hope that helps!

I have made fresh pasta before, but lost the recipe book that came with my pasta attachment, so I am super glad to have found this recipe. Now to find a recipe on how to make small batches of ricotta cheese. Homemade lasagna, here I come. i don’t care that its gonna be 82 degrees next week. Its never too hot for fresh pasta.

My friend and I added another egg and about 6 tablespoons of water- but we are at a high altitude. Great pasta- loved the video- will never buy pasta again!

The dough was dry but added water as needed… No problems.
We use semolina flour on the boards afterwards to stop the sticking, and boil only for a minute otherwise it turns to clag.
Absolutely delicious, and definitely a go-to recipe.

Julie I just made my first pasta & used your recipe. The video was great & so helpful. My husband & I made it together. Having another set of hands made it easier. I was just wondering about freezing the dough before making pasta. Have you done this? Also if you can freeze it after you make the pasta & if so what is the process you use. Hi, I used the same process that you did for flattening out the dough and cutting it, but my issue came with drying it. When I made the dough into “nests” it all just stuck together and when I tried boiling the pasta it was just a messy glob. Any suggestions?
I just had the same “sticking” issue!!! I used the recipe that came with my pasta attachments–that I got yesterday 🙂 I’m not sure what I did wrong and ended up throwing all of my cut, cooked, and extra dough out. My sister, who is a chef, told me to use semolina flour instead of regular flour. I’m totally sad that my first attempt went wrong, but I’m determined to keep trying. I’m wondering now if it would have turned out if i hadn’t “nested” my cut pasta? I did notice though that my dough got kind of sticky as it sat. I’ll just keep trying I guess. Anyone have any good tips or suggestions?
Hi Derek,
When is the sticking happening…in the machine or when you boil it? I only let the pasta sit for a few minutes before I boil it. If it’s sticking in the machine, be sure to put a lot of flour on each sides of the sheet before putting it into the machine. Not sure it’s regular flour or semolina, I use both and it works just fine for me. Please feel free to give me more info and I’ll help you troubleshoot!

I haven’t tried drying my pasta yet but I don’t think they should be nests when you try to dry them. They should be hung and separated. I’m sorry for the confusion and that it didn’t work out for you! I’m going to update the recipe right now.
I just got the pasta attachment set for my birthday and I am so excited!! I watched your video and it was great. I wanted to add herbs to my dough…but figured I should start simple and work my way into that. I can’t wait for fresh pasta for dinner tonight!!
Mixed dough with kitchen aid exactly as manual said. Was just flour and no dough consistency.added water in small amounts and never did make dough. A complete waste of my home grown eggs and time. Am going to store to buy noodles.
Oh my, that is not good. Don’t give up though!! It is much healthier to make your own at home and so much better tasting!! I also use farm fresh eggs and would be disappointed to have “wasted” them, but something must of gone wrong that is not typical. I am making my first batch tonight and am looking so forward to it!! I have the same recipe from my Kitchen Aide mixer and pasta attachment set that is also used here on this website…so I am hoping for the best. See I have the OTHER kitchen aid pasta attachment. If you’ve seen the meat grinder attachment it’s the SAME ONE…only you put the pasta cover on. So the dough rolls through the spiral and pushes out the front. Literally always has me in tears, because the pasta sticks together horrifically! It’s the most horrible attachment ever made. The one you have seems more likely to work. Thanks for the video!

I haven’t used that type before, both have seen it. Your dough might be too wet when you use it. Also make sure you kneed the dough long enough and then make sure you let it rest before using it.

This sthe best recipe. Other ones have been crumbly but tasted good. I am lucky that I have “farm fresh” eggs which makes a beautiful noodle or dumpling, prettier than the pasty grocery store egg. THANK YOU!!

I made this pasta for dinner tonight and it was great! I made a home made alfredo sauce and I felt like I was out at an expensive restaurant! I don’t have the pasta attachment for my kitchen aid but I do have a pasta machine. It was so much easier than I thought it was going to be and I will be making this again. Thank you!

This is how I make pasta but I never used the stand mixer to mix it . I always mixed it by hand and then used the attachments just to roll it out and cut it..how silly have I been? I learned to do it without a mixer es why I guess? Thanks now I will use my mixer for everything!
I tasted my first homemade pasta at a dinner I attended and went rit home and bought the attachment. With my usual buyers remorse, I wondered what have I done? After seeing this video, I can’t wait for the attachment to come so I can try it for myself.

Just tried my past attachment for the first time. EASY! Now I’m boiling water!
I tried this recipe last night. The dough didn’t really come together for me in the mixer, so I had my BF knead it by hand. It was a bit too dry, so he wet his hands to knead it. I let it rest for 30 minutes, cut it into four pieces, and started feeding it through the attachment. AND IT WAS AWESOME! Loads of fresh linguine which we ate of all! This is a very light, delicious recipe. Can’t wait to make some more on the weekend.
What I found that I needed to do was add 1/4 cup of water instead of 2 tablespoons. Mine was dry and crumbly with only 2 tablespoons.
