Cookie Cake Bars

This is a very easy cookie cake bar recipe given to me by my friend, Kathy, who got it from a friend named Myra who got it from another person. I don't know where this recipe originated to give due credit. The recipe was originally called Cookie Cake and calls for chocolate chips instead of swirled chips. And it also directed you to spread the batter on a pizza pan so it's more like a round cookie cake but I tweaked it to be more like bars.

My family and friends enjoy this treat every time I make it. It's very easy to make because the main ingredient is a box yellow cake mix. It has the chewy texture of a brownie as well as the flakiness of one. I like the light sweetness the white chocolate from the swirled chips give them as well.

This is what the batter mixture looks like after mixing the cake mix and wet ingredients. It looks almost like a cookie dough.


Pour in the swirled chips and mix just to combine.


Pour into pan covered with foil and sprayed with Baker's Joy. I use an angle spatula that has been sprayed with Baker's Joy to smooth out the batter in the pan (otherwise the batter will stick to your spatula).

After it's done in the oven, I put the whole pan on a cooling rack. After 10-15 minutes, I lift the entire cookie cake using the foil onto the cooling rack and you can let them continue to cool or cut them immediately. This is what the tasty treats look like. I hope you try them because they are very tasty and easy. (By the way, that's not a paper plate! I love these plates I found this summer at Target, they are plastic and made to look like your standard paper plate.)

Cookie Cake Bars

Ingredients

  • 1 box Duncan Hines Yellow Cake Mix, no pudding
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 2 Tbsp water
  • 10 oz bag of Nestle Swirled Chips, Semi-Sweet Chocolate & Premier White Morsels

Instructions

  • Mix cake mix and wet ingredients just until combined (be careful not to over mix).
  • Add swirled chips and mix until just combined (be careful not to over mix).
  • Take a 9x13 pan, cover with foil and spray the foil with Baker's Joy or other baking non-stick spray.
  • Pour batter into the pan and smooth out with an angled spatula that has been sprayed with Baker's Joy.
  • Bake at 350 for 20-30 minutes or until a toothpick comes out (almost) clean.
  • Allow the pan to cool on a cooling rack for at least 10-15 minutes before cutting.
  • Putting foil in a 9x13 pan and spraying with Baker's Joy is also my technique for less mess when making brownies. It's easy for me to lift out of the pan onto the cooling rack.
