Oven-Fried Herb Chicken Nuggets

I know two things: we're always working within a budget when it comes to household expenses and we're always looking for different ways to cook chicken! In comes Hellmann's and their Chicken Change Up campaign. When asked to join in, I couldn't refuse!

I had a little get together with friends and had them try my adaptation of their Oven-Fried Herb Chicken – I made them into nuggets! Inspired by a recipe that landed from my inbox from Everyday Food, I decided to use panko breadcrumbs.

When we throw a party, we try to use what we have and plan the food that way. I don't always use plastic or paperware, it's okay to use mismatched plates, it adds color to your party. And by all means, always, always have plenty of food! There's nothing like running out of food.

To cut into nuggets, I first cut the chicken in half length-wise, making them cutlets. Then I cut into strips. You're welcome to leave them as strips or fingers(!) or cut them into little nuggets like I did.

Browning the panko breadcrumbs before dipping the chicken in them cuts down baking time and gives your nuggets a well-rounded flavor.

Oven-Fried Herb Chicken Nuggets

Prep Time 20 minutes
Cook Time 20 minutes
Total Time 40 minutes

Ingredients

  • 1 1/2 cups panko breadcrumbs
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 Tbsp Italian parsley, chopped or 1 tsp dried parsley
  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup Hellmann's Mayonnaise Dressing
  • non-stick cooking spray

Instructions

  • Preheat oven to 400 degrees. Place breadcrumbs onto a lined baking sheet and bake for 6 minutes.
  • Cut chicken into cutlets and then strips. Leave as strips or cut into nuggets of uniform size. Mix breadcrumbs with salt, pepper and parsley.
  • Add chicken to zippered plastic bag along with the mayonnaise dressing. Shake evenly to coat. Remove chicken and lightly dip in the breadcrumb mixture.
  • Spray a wire or cooling rack with non-stick cooking spray and place on top of a lined cookie sheet. Arrange chicken on top of the wire rack and bake for 8-12 minutes. Serve immediately.
