I'm a huge fan of my 5.5 quart Le Creuset French oven. I was really lucky to win it in the holiday recipe exchange hosted by Katie at Good Life Eats and Jamie of My Baking Addiction this past December (thanks to you all for the votes). I was so excited when I won. I have used it to braise beef, make tomato sauce, make black beans and even fry beignets in oil. It's very easy to clean too.
I was so excited that before I even received it, I hopped on over to my local Le Creuset outlet store and bought myself a cast iron grill skillet (which I love too). Here's mine pictured below in Caribbean blue. Nice, isn't it? And I have a little confession to make, the other night I was making black beans in my French oven and I told my husband I want another one.

oooo I would make a couple of Quorn roasts using their recipe…so tasty!
First, remove the roast from the shrink-wrap plastic thingie (even though they tell you not to). You will want to use a small, shallow pan (I use a small bread loaf pan – just big enough to fit the roast in). I like mine a bit dry, so if you like yours more moist use an oven safe bag.
I completely “baste” it in extra virgin olive oil – you’ll want at least a half a cup, and be sure to get it good and coated. I then sprinkle a bunch of spices on the roast itself (and feel free to fine-tune it to your own taste)…my list includes plenty of poultry seasoning, dried rosemary, garlic, plenty of black pepper, season salt, italian seasoning, and anything else that sounds yummy to you (I believe on the back of the box they have some spice suggestion as well). Just make sure it is coated in your spices all around.
Then you can bake it according to the directions on the back of the box – only thing is that you will want to turn it several times so all four “sides” get browned (again, this is how I like it so if you don’t like it sort of crispy you can turn it more often). I think it bakes for around 45 minutes, so I turn it every 8-10 minutes, and baste it at that time as well with the “juices” at the bottom of the pan, adding more spices at the same time if you’d like. The more you baste it the better it will be! Ideally, I like mine with a nice brown (almost burnt) “outside” all the way around. Once it’s done and cool I slice it thinly and use it in sandwiches or just eat it as is. It is SOO good even cold. Plus, even my non-veggie relatives think it’s pretty good!

Homemade Organic Baked Mac and Cheese
Ingredients
* 5 tablespoons Organic Valley Cultured Unsalted Butter, divided
* 1/2 cup homemade bread crumbs
* 1/4 cup Organic Valley Shredded Parmesan Cheese
* 1 pound organic dry pasta in elbow or other small tubular shape
* 4 tablespoons organic flour
* 4 cups Organic Valley Whole Milk
* 1 teaspoon dry mustard
* 6 cups (24 ounces) grated Organic Valley Sharp and/or Mild Cheddar Cheese
* Salt and pepper to taste
Preparation
1. Preheat oven to 400° F. Melt 1 tablespoon butter and combine with breadcrumbs and Parmesan cheese in a small bowl. Set aside.
2. Cook pasta per package directions, drain, and return to pot.
3. In large heavy saucepan, melt remaining butter over low to medium heat. Add flour and whisk until golden. Add milk; continue whisking and cooking until sauce thickens slightly. Add dry mustard and grated cheese, whisking until cheese melts into sauce. Taste and add salt and pepper as desired.
4. Pour sauce over pasta and stir to combine well. Transfer macaroni to a 4-quart baking dish. Sprinkle with breadcrumb mixture.
5. Bake 25 to 30 minutes until lightly golden and bubbling.

If I had a French oven, I would bake with it, starting with a fruit cobbler. I don’t have a recipe. I usually prep seasonal fruit that I buy from the farmer’s market, toss it in a pan, then top if with some sort of streusel or dough.

Red Curry Chicken
From prep time to eat time: 30 – 45 minutes
Serves: 8-10 (leftovers for a smaller family)
Ingredients
•8 boneless and skinless chicken thighs (free-range, hormone-free)
•1 14 oz. bag of frozen stir-fry veggies (I like 365 brand) or you can use
•1 14 fluid oz. can of organic coconut milk (don’t use light)
•1 Tbsp. red curry paste (I use Thai Kitchen brand)
•1 – 2 Tbsp. naturally brewed tamari premium soy sauce with reduced sodium (I like the San-J brand)
•1-2 Tbsp. sukenot OR brown sugar OR honey OR agave nectar
•Garnish: fresh cilantro, fresh lime leaves or basil leaves
Preparation
1. Chop chicken into 2 inch pieces and set aside.
2. In French oven, simmer coconut milk with 1 Tbsp. of red curry paste over medium heat for 5 minutes. Then, add 1-2 Tbsp. soy sauce, 2 Tbsp. sukenot (or substitute), and 1 – 2 Tbsp. of water. Add chopped chicken thighs and simmer for 10 minutes, stirring occasionally.
3. Stir in frozen or fresh veggies and continue cooking 8 – 10 minutes, until vegetables are tender.
4. Garnish with fresh cilantro, basil, or lime leaves. Serve with cauliflower rice or, if you must, basmati or jasmine rice.

I would probably make chili or a pot roast in this wonderful french oven. I know that sometimes meat just dries out in a conventional oven and so this would ensure a moist, fall off the bone type meat! I’ve made Ina Garten’s roasted butternut curried squash soup weekly since Superbowl Sunday…when I first discovered the recipe in a cooking magazine. I love that it doesn’t incorporate cream or potatoes, but yet it’s thick, slightly tangy, and it’s garnished with beautiful colors and textures that make the flavors pop.

My only variation is that I use smoked paprika and a little chipotle pepper for some kick. Instead of sweetened and shredded coconut, I use unsweetend (doesn’t need the nasty sugar for great flavor).
The fennel green is so delightful—the color of fresh spring grass…limes…spring bursting forth…how cheerful!
What a lovely contrast it would make with a rich, golden orange-yellow butternut squash soup!

I’m following you on FB and I “liked” this post. I’ve been yearning for a Le Creuset French oven for a long time. I had one once, but when my daughter admired it, I gave it to her. I would make a big pot of my chili recipe. I begin by browning 2 pounds of ground beef. Once the beef is nicely browned, I remove it from the pan. After adding 2 tablespoons olive oil to the pan, I add two large onions, chopped, and two or three red and/or yellow pepper, chopped. The veggies are cooked until softened. I add the beef back into the veg mixture and season amply with chili seasoning, salt and pepper. Red pepper flakes can be added for extra heat. I then add two large cans of chopped tomatoes and three cans of beans — one can of chili beans, one black beans, and one cannellini beans. I also add 3 dried chipotle peppers. Finally, my “secret” ingredients are added 1/3 cup brown sugar and 1/3 up peanut butter. The chili is cooked on a low heat for 1 to 2 hours. Good served with either sour cream or shredded cheddar cheese.

The first thing I would make is Beef Tips on Rice. I use a black cast iron pot and think it picks up a flavor from the pot itself, even though there’s no tomato sauce and the pot is fairly new.
Here’s the recipe:
Beef Tips on Rice
From The Ultimate Southern Living Cookbook
3Tablespoons flour
1 teaspoon salt
½ teaspoon pepper
½ teaspoon paprika
2 lb. boneless top sirloin roast, cut into 1-inch cubes
2 Tablespoons vegetable oil
1 onion, chopped
1 beef bouillon cube, or 1 teaspoon Better Than Bouillon
¾ cup boiling water
4 cups cooked rice
Directions:
Combine first four ingredients in Zip-lock bag and shake to mix. Add beef cubes; seal bag and shake until meat is coated.
Brown beef in hot oil in Dutch oven, stirring often. Add onion and cook until tender.
Dissolve bouillon cube in hot water; add to beef mixture.
Cover, reduce heat, and simmer for 2 hours, stirring occasionally. Serve over rice.

I would make a recipe for chicken cacciatore. This makes the house smell so good and leaves you wanting more!
Chicken Cacciatore with Rice & Mushrooms

4 chicken thighs, skin on and bone in
6 oz. white mushrooms, sliced thin
1 med. green pepper, sliced
3 cloves garlic, sliced thin
1/2 yellow onion, chopped fine
12 oz. tomato sauce
1/2 cup dry red wine (such as Malbec)
Kalamata olives to taste
1/4 cup Italian parsley
1/4 cup olive oil
1 cup white rice
Prepare rice:
– Boil or steam, according to preference, and reserve.
Prepare chicken:
– Heat olive oil in a deep saute pan.
– Season thighs with salt and pepper, then add to pan.
– Brown chicken on both sides, then remove and set aside.
– Using the same pan, add mushrooms, pepper, and onions.
– Brown for 3-5 minutes, then add red wine.
– Reduce liquid by half, then add olives and garlic.
– Return chicken thighs to pan, then pour tomato sauce on top.
– Allow to simmer 45 minutes to an hour, until chicken is very tender.
Serve:
– Plate over a bed of rice, topped with Italian parsley.
