Brown Butter Funfetti Sugar Cookies

I’m obsessed with sprinkles. My husband will tell you that I pronounce them as sprankles. Don’t ask… I love my sprinkles with vanilla ice cream. And way before I had my first job at a Haagen-Dazs, my favorite dessert was their hand-dipped ice cream bars dipped in milk chocolate and five million sprinkles.
My other obsession, brown butter. So I’m taking sugar cookies to another level with brown butter.

Don’t burn the butter. I did and I had to start over. It’s very upsetting when you waste butter. Don’t waste butter like I did.

I used this nifty cookie scoop to ensure my cookies were all the same size.

Right out of the oven! First, I’m in love with convection, if your oven has that setting, use it. Second, the fine folks at Silpat overheard my conversation with Maria on twitter…she was shocked I had never used a Silpat before, so they emailed me and offered to send me a couple to try out.
Umm, I’m in love. I love that they are easy to clean up and the bottoms of my cookies didn’t get too brown, just the way I like it. They only fit a couple of my cookie sheets, so time for me to shop for new cookie sheets. Do you have a favorite brand?

They are thick & chewy!

Buttery and slightly nutty from the brown butter, I love these chewy cookies…and they have slight crunch from the sprinkles. These are my new favorite sugar cookies!
Brown Butter Funfetti Sugar Cookies
Yield: 16-18 cookies
Prep Time: 25 min
Cook Time: 20 min
Total Time: 45 min
Everything's better with brown butter!
Ingredients:
1/3 cup shortening
1/3 cup unsalted butter, browned
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose unbleached flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons sprinkles
Directions:
Heat oven to 350 degrees.
Add butter to a saucepan and heat at medium. Don't let it burn. Continually stir with a wooden spoon and remove from heat when butter particles start to brown, about 5-8 minutes. Set aside and allow to cool.
In the bowl of a stand mixer, add browned butter, shortening and sugar. Mix thoroughly until creamed together. Add egg and vanilla and mix thoroughly. Add sifted flour, baking powder and salt. Quickly mix until just combined, don't over mix. Add sprinkles and combine with a rubble spatula.
Using a medium cookie scoop, approximately 1.5 tablespoons, scoop dough balls and roll with your hands into a complete ball. Place onto a cookie sheet covered with a Silpat or parchment paper. Bake for about 10 to 12 minutes. Allow to cool on cooling racks.
Cookie Tip:
Store your cookies in an airtight container with a piece of bread. The bread will dry up and keep your cookies soft.

I JUST made my first recipe with brown butter. Holy crap, have I been missing out! LOVE this recipe!
Sprinkles could be their own food group at my house. My little guy begs for his own jar of sprinkles just to eat, so I know they would love your cookies.
My Mom gave me a couple of Silpats and I kept them for a year before I tried them. I think I’ve used them every day since. They are the best!

I’ve never tried the funfetti stuff..where have I been?? I also love my Silpat and use it way too much but it doesn’t matter, It still looks like I just bought it..amazing product!

Anything with browned butter instantly makes me salivate. These cookies did just that. I don’t think I’d be able to wait for them to bake, I’d just dig into that dough with a spoon.

Alright, since Funfetti is my daughter’s favorite birthday cake, I HAVE to make these for her. Plus they look scrumpty dumpty!

Julie! I just saw this on Pinterest! I’m doing a rainbow-themed party for Mikaela’s 1st birthday so these would be perfect! Have you ever rolled them out and cut out shapes? (BC you KNOW I have to decorate them!!!)

I’m not sure if you can roll these cookies out…I would refrigerate them after cutting them out if you do. Let me know if you try these! I can’t believe she’s going to be 1 soon!

Yum…. these look delicious! OMGoodness.
I made these and they are great. Honestly though, they were way too salty. I am getting ready to try a second batch with probably a 1/4 of the salt suggested.

Did you use salted butter? I should have noted to use unsalted butter. I just fixed the recipe.
I actually used Earth Balance Soy and Dairy free butter. I also omitted the egg, and substituted a tablespoon of applesauce. (Allergy- free batch) I imagine that unsalted butter would have made a huge difference. I didn’t think about that. Thank you! Since I can’t use real butter, I will just greatly reduce the amount of salt that I add.
Okay, my address is. . . . I need these STAT! Brown butter sugar cookies! LOVE and I love my Silpat too. I have the exact one you have-the best on the mark!
These look SO yummy! I think I might have to make them. I’m super jealous of your convection oven. I just have a possessed oven (can’t wait to move!) :p And, this is a little embarrassing, but tell me more about brown butter. I know what it is and I see it in recipes… but why is it better?

Hi Tamara! When you brown the butter, it gives it a nutty quality. It gives the butter another whole level of flavor. Try it sometime, in baking or even in cooking.

oh, and cookie sheets – i did some research a while ago and found most people really like the plain ones you get at restaurant supply stores. I can’t say that I’ve actually tried them because well, restaurant supply stores aren’t on my daily route so one day i’ll make the time….
These look and sound delicious. I like the little cracks on top. Picture perfect!
Oh! I love all the colorful goodies you have over here. These remind me of grocery store cookies, but that’s not a bad thing! They just bring back nice memories.

What a delicious recipe! I have a confetti cookie recipe that I love too. They can be little bit of work, but they’re so worth it. And so pretty too! I’ve never cookies on a Siplat either. One of these days I’ll have to give it a try!

To go along with your “not real” white, sour cream almond cupcakes which use a cake mix, I have been making funfetti cookies that have been “not real” using the funfetti cake mix and the directions on the cake mix box for making the cookies. I have to admit I am a secret fan of these cookies as they really are good! Now, I have a REAL recipe to try with a wonderful twist. My son will love them as he is the one I made the funfetti cookies for…to share with his class at school for his birthday.
OMG!! I am salivating right now. Gonna make these tomorrow first thing in the morning!
