I can hardly contain myself, today is the day that my friend, Lindsay’s cookbook is released, The Cookie Dough Lover’s Cookbook. Lindsay blogs at Love & Olive Oil, is a web designer (she designed this blog!) and can now add cookbook author to her resume. It’s been a long time coming, I have been waiting over a year for this moment and I’m so glad to be able to share with you not just one giveaway but two giveaways!
A couple of weeks ago, I received an advance copy and I promptly added post-it notes to the recipes I wanted to try. It was a hard decision but the first one I tried were Lindsay’s cookie dough-stuffed dark chocolate cupcakes. They were amazing! While I was stuffing the cupcakes with the cookie dough, I couldn’t help but eat some. I later told Lindsay and she said she purposefully made the recipe so that there would be enough for snacking while making the cupcakes. Pretty smart!

I feel bad that I can’t share the cupcake recipe with you…you’ll have to buy the book to get the recipe! I did drop off the extras at our veterinary clinic and they loved them…I mean loved them. I got the sweetest thank you card in the mail from them. Looks like I will need to make more of these and drop them by the next time we drop in with our zoo.
I am able to share with you Lindsay’s recipe for eggless cookie dough…so get that bowl and mixer out and start making some. I don’t think anyone will care if you use your fingers!
Yield: 1 1/2 cups
Total Time: 15 min
1/2 cup (1 stick) unsalted butter, room temperature
1/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 tablespoons milk or cream
1/2 teaspoon vanilla extract
11/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup mini semisweet chocolate chips
In a large bowl, beat butter and sugars with an electric mixer on medium speed until light and fluffy, 2 to 3 minutes. Mix in milk and vanilla. Stir in flour and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips.
Dough can be enjoyed immediately or stored, covered or in an airtight container, in the refrigerator for up to 3 days.
