I can hardly contain myself, today is the day that my friend, Lindsay’s cookbook is released, The Cookie Dough Lover’s Cookbook. Lindsay blogs at Love & Olive Oil, is a web designer (she designed this blog!) and can now add cookbook author to her resume. It’s been a long time coming, I have been waiting over a year for this moment and I’m so glad to be able to share with you not just one giveaway but two giveaways!

A couple of weeks ago, I received an advance copy and I promptly added post-it notes to the recipes I wanted to try. It was a hard decision but the first one I tried were Lindsay’s cookie dough-stuffed dark chocolate cupcakes. They were amazing! While I was stuffing the cupcakes with the cookie dough, I couldn’t help but eat some. I later told Lindsay and she said she purposefully made the recipe so that there would be enough for snacking while making the cupcakes. :) Pretty smart!

Lindsay’s cookbook is beautifully photographed and filled with tips, tricks, variations and just plain cookie dough goodness. If you like cookie dough and were afraid of getting sick – this is your book. Her cookie dough recipes contain no egg! There are candies, cookies & brownies, cakes, custards & pies, frozen treats, breakfast recipes, fun snacks & party far and even more.

I feel bad that I can’t share the cupcake recipe with you…you’ll have to buy the book to get the recipe! I did drop off the extras at our veterinary clinic and they loved them…I mean loved them. I got the sweetest thank you card in the mail from them. Looks like I will need to make more of these and drop them by the next time we drop in with our zoo.

I am able to share with you Lindsay’s recipe for eggless cookie dough…so get that bowl and mixer out and start making some. I don’t think anyone will care if you use your fingers!

Eggless Chocolate Chip Cookie Dough

Yield: 1 1/2 cups

Total Time: 15 min

Ingredients:

1/2 cup (1 stick) unsalted butter, room temperature
1/4 cup granulated sugar
1/2 cup light brown sugar, packed
2 tablespoons milk or cream
1/2 teaspoon vanilla extract
11/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup mini semisweet chocolate chips

Directions:

In a large bowl, beat butter and sugars with an electric mixer on medium speed until light and fluffy, 2 to 3 minutes. Mix in milk and vanilla. Stir in flour and salt and mix on low speed (or by hand) until incorporated. Stir in chocolate chips.

Dough can be enjoyed immediately or stored, covered or in an airtight container, in the refrigerator for up to 3 days.

    The cookbook does look amazing, and the cupcakes you baked looked gorgeous too, i just want to snap them up and eat them :) I’ll be requesting for this cookbook in our local bookstores but it’ll probably take awhile before any copy lands this side of the world.

    All of the recipes that I’ve seen from this book make me want to break my diet and enjoy some dough. :-) I absolutely love cookie dough! I was that kid who would sneak a spoonful when Mom wasn’t watching…salmonella, what’s that??

    Hmmmm…. let me think about this. Yeah, I love cookie dough… which is why I so rarely make cookies, because I tend to just nibble on the dough throughout the whole process.
